Autumn vegan bowl of goodness!

It is Autumn and time for delicious bowls of stew, this one is so good that my son dont even notice the lack of meat in it every single time ! Is one of my very favorites and i hope you like it too.

It is pack with nutrients and fibers from the sweet potatoes, lentils and carrots, of course feel free to add or leave out something if you want, except for the sweet potatoe wich is the base of the stew. Onions and mushrooms are good in this recipe too.

So here it is, I called it:

Autumn bowl of goodness!

serves about 8 to 10

  • 1 32oz container veggie broth (low sodium if possible)

  • 1.5 Cup water

  • 3 (14.5oz) cans diced tomatoes

  • 1 16oz package dried lentils, rinsed yellow or orange

  • 2 sweet potatoes, cubed

  • 3 carrots, sliced

  • 3 stalks celery, sliced (optional)

  • 1 green pepper, sliced

  • 1 to 2 cloves garlic, diced

  • Huge handful kale (optional)

  • 2 Tbsp cumin

  • 1 Tbsp cinnamon

  • 2 Tbsp chili powder

  • 2 tsp pepper

  • Bunch of cilantro (for garnish)

  • Hot sauce (optional — to taste)

1) Mix into the pot the veggie broth, water, diced tomatoes, and rinsed lentils. Bring the mixture to a boil ,simmer for about 10 minutes or until soften the lentils.

2) Throw the garlic, kale, carrots, and sweet potato into the pot, about 5 minutes later put in the celery and green pepper with the spices. The room will now proceed to smell awesome like Autumn!

3) Continue to simmer, stirring frequently, let it it reach the level of cooked consistency of your choice. About maybe 5 to 10 minutes more— just make sure the carrots, sweet potatoes, and lentils are soft and

Serve with a piece of stelp bread and Enjoy!

Serve as is or top with hot sauce, or salsa and cilantro like i do with mine!
