Roasting grapes in Autumn!


love this recipe, is full of Autumn flavors and is simple and fast. It is cold outside and inside the warmth of the oven and the smell of the roasted grapes with thyme fills my home. Cant wait to sit down to eat this with a warm piece of rustic grain bread ! Lets just make this!

Roasted grapes with seared boneless pork chops

4 servings

  • 4 Tbs. extra virgin olive oil, divided

  • 4 boneless, skinless pork chops

  • 2 – 3 cups seedless red grapes, pulled from the stems

  • 6 sprigs fresh thyme

  • 2 Tbs. fresh oregano

  • Fresh Greens (Arugula,endive,Frisée,Red Leaf,Radicchio) or get a bag of green salad spring mix make sure to rinse it well.

* course salt and fresh grind pepper (adjust the quantity of the salt and pepper to your taste


Preheat oven to 400. Get the grapes on a cookie sheet. Drizzle with oneTbs. of olive oil. Sprinkle thyme sprigs over the grapes, with a small pinch of salt. Roast the grapes for 20 minutes, or until they’re slightly wilted and bursting.

In the meantime, heat the remaining oil in a frying skillet over medium-high. Season the pork on both sides with salt and pepper and sear for 10 minutes per side. (depends how thick they are)

Arrange the pork on a serving plate; sprinkle the roasted grapes over the pork and drizzle with any remaining grape juice. Serve with a side of greens (arugula ect) Garnish with fresh oregano and serve with crusty bread !

When i eat this, I dont put any dressing on my salad and mix all the greens with the grapes and grape juice from the pan, the grapes burst in your mouth, warm and juicy and is all you need for your dry leaves to be moist, just delicious!

Easy,fast, low fat, low carb, low calories and just a few ingredients ! Remember, organic and fresh is always better, but use what you have. Learn to enjoy your food, consume less but stay satisfied, you will loose weight and feel and look incredible!
