Easy,fast eggs,avocado & roasted peppers rustic toasts

I know this is so easy I should not even include it here and the images might not be the cutests, but in this Holiday craze when we get home tired phisically and mentally all we want to eat is easy and fast. So this little toasts are the best to keep up with your eating clean routine intact. Remember try to use organic as much as you can, if not just opt for fresh .

So here it is. Multiply ingredients as needed.

Ingredients for one person

2 organic eggs

1/2 of a ripe avocado mash

half of a red pepper roasted and peeled and cutt in little pieces or (2 teaspons of diced organic roasted peppers from a can)

one person portion of rustic whole grain french bread

Baby spinach (add as much as you want)

Put the half of a red pepper under the broiler in the oven, remember to keep an eye on it. Fry the eggs on very little olive oil ( like 2 tablespoons ) you can poach them if you prefer and have the time or boiled them. I wanted them fast, so I fry them in the smallest amount of olive oil posible. Put the eggs aside. Check the pepper, it should be blakened on top when is ready, doesnt have to be the whole piece black, just a good amount. When is ready put it in a small bowl of cold water. Meantime put the bread in halves to get toast in the oven. Meantime mash the avocado halve. Get the red pepper and peel the skin off, diced it and ad to the mash avocado and mix. The bread should be ready by now, take it off the oven/toaster and spread cover with the spinach leaves, spread with the avocado mix, half on each bread halve. Top with an egg each and sprinkle with pepper and salt for your taste !
