Super greens and cannellini beans with turkey sausage in a clean eats soupy stew!


When is cold and wintery out, I love a good stew or soup. These days I am all for super greens and I try to include them in everything I can. This is why yesterday when the day was so gray and foggy out I drop some kale in a pot and make me a spicy stew/soup of cannellini beans and grilled turkey sausages with a nice sliced "full of grains" ciabatta bread!

Ingredients Vegetable oil cooking spray 2 tablespoons extra-virgin olive oil 2 medium fennel bulbs, outer layers removed, chopped 1 medium onion, chopped 1 1/2 teaspoons kosher salt 1/2 teaspoon red pepper flakes One 28-ounce can dice tomatoes One 15-ounce can cannellini beans One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces 1 cup low-sodium chicken broth 4 Hot turkey or chicken Italian sausage Place an oven rack in the center of the oven. Preheat the broil part of the oven, Spray a grill pan with vegetable oil cooking spray and put it in until hot. In a big pot, heat the oil over medium-high heat. Add the onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly until is soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight-fitting lid and cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes. While the stew is cooking, place the sausage on the grill pan under the broiler, grill turning occasionally until cooked through, about 20 minutes. Take them out and let them cool and cut into 1/2-inch-thick slices. Add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt.Spoon the stew into bowls, sprinkle with some Parmesan cheese and serve with some rustic bread. I am eating a beautiful and healthy version of ciabatta bread, 15 grains is not only delicious is just beautifully healthy!
