May is here in two more days, and that means Strawberries are everywhere ! Delicious red, juicy ..plump and ripe strawberries...I couldn't wait to get you to try this recipe, I just had this vibrant and fresh spinach that just screams goodness and the strawberries, toasted almonds for that perfect crunch, drizzle with a little poppy seed with light red wine dressing... and is so delicious that I had to post now, right away!
I put it together with a piece of broiled Salmon and my mouth and heart are so happy. :)

Ingredients
1 tbsp poppy seeds
1 lb spinach
1 quart slices strawberries
¼ cup toasted slivered almonds
Red wine vinegar (recipe at the end)
baby red potatoes (optional)
Broiled salmon (optional , salt,pepper and lemon a few minutes under the broiler and is done)
Instructions
In a medium-sized bowl, whisk together the ingredients for the dressing :
Light red wine dressing
1/2 cup red wine vinegar 3 tablespoons lemon juice 2 teaspoons honey 2 teaspoons salt Freshly ground black pepper 1 cup olive oil
In a small bowl or glass jar, add all the ingredients except the olive oil. Mix well, then slowly drizzle in the olive oil to combine. Refrigerate until ready to use.
2. While the dressing is chilling, combine the spinach and strawberries in a large bowl. Pour on the dressing and toss. Garnish with toasted almonds and poppy seeds !
