Clean eats Garlic Aïoli with fingerling potatoes


I had more of this beauties and decided to just bake them and eat them with a nice Garlic Aïoli , these are fingerlings potatoes you can just boiled them or roast them steam ..whatever! They are small so don't overcooked them or they can come apart. But you can use any other potatoes you have if you just want to try the sauce, you can make "Gajos de papa" (roasted potato wedges) and dip in! Or you can add poached eggs on top, then you have your protein and it becomes a delicious meal !

This recipe is for 3/4 of a cup, modify for your needs.

Ingredients

  • 3 garlic cloves, chopped

  • 1 large egg

  • 1 tablespoon freshly squeezed lemon juice

  • 1 tablespoon chopped fresh parsley

  • 1/2 teaspoon salt

  • 2 turns freshly ground black pepper

  • 1/2 cup olive oil

Combine the garlic, egg, lemon juice, parsley, salt and pepper in a food processor or blender and puree. Add the oil in a slow stream and continue to process until the mixture has formed a thick emulsion.
