Oatmeal simmering with creamy coconut milk, mmmm so luscious! Top it with some fresh mango and coconut for pure heaven. And as a bonus: it’s vegan! The coconut milk and the vanilla lend the perfect touch of sweetness ( without being too much!) – But you can always add a little of your favorite sweetener as you like.

Ingredients:
1/2 cup sweetened flaked coconut 1 cup oatmeal (not fast cooking ones) 1 1/2 cups water 1 1/2 cups light organic pure coconut milk (canned) Pinch salt 3/4 cup chopped ripe mango 1 teaspoon vanilla extract 1-2 tablespoons sugar or another preferred sweetener
Directions:
Place oats, water, light coconut milk, and salt in a medium-size saucepan over medium heat. Stirring occasionally brings ingredients to a boil, then reduce heat to medium-low and simmer for 20 minutes until thick and creamy.
Stir in vanilla extract. Taste for sweetness, and add sugar if desired depending on your individual tastes. Spoon into individual bowls and sprinkle with toasted coconut and top with mango. Serve.
