Sardines in a Mediterranean clean eating sauce for filling or toppings, delicious!


I love sardines! I love fish in general. But I love the convenience of this little ones. They pack a punch for your health and they are very inexpensive. Of course, always try to get them fresh from your fish market, if you are lucky enough to get them fresh, the strong flavor of sardines will be almost not detectable. If not get them organic and in different flavors and sauces, they will help you cook off anything on the spot. Thay had saved my day many, many times. So I am always in the search for new ways to enjoy them and this one is one of the best. Fresh or canned, this recipe is perfect for filling your green peppers, tomatoes, baked or boiled potatoes, as a side for rice or to top your delicious brushes! Make it spicy or just keep it with the Mediterranean flavors. This will be a favorite one!

INGREDIENTS

1/2 red onion diced 1/2 green pepper diced 2 ripe Roma tomatoes diced 2 medium garlic cloves mashed

3 tablespoons of sliced pitted green olives with roasted red peppers salt and pepper to taste One tablespoon sliced fresh parsley 2 cans of organic good quality sardines (mine were in tomato sauce, but you can use in olive oil or water and add tomato sauce to your recipe. I had used the ones in Louisiana hot sauce and takes this recipe to another level ...so good! ) one teaspoon olive oil (one teaspoon red pepper flakes) optional

How to

In a sauté pan pour the olive oil, heat it in med-high and add the onions, olives and the green pepper and cook until almost translucent. Add the mashed garlic and sauté to relieve the smell and flavors, add the pepper flakes if you want now. Cook the mixture for a couple more minutes and change the temperature to lo-med add the sardines with the tomato or hot sauce in. If you have olive oil or water ones, add them without the liquid and add some tomato sauce to the mix, as much as you like. (Just to moist them if you will use them as a filling or top the bruschetta's, more sauce if you want it as a side dish for rice). Add the parsley and cook the mix as you break the sardines in bite able pieces as it cooks. When ready top your French bread toast with it and sprinkle with salt and fresh ground black pepper.
