Ingredients
1 1/2 cup Gluten Free Cup for Cup Baking Flour I like Bob's, Red Mill 1 tablespoon cornstarch 1 teaspoon baking powder 1/4 teaspoon baking soda 1 teaspoon salt 1/2 cup unsalted butter cold and cut into cubes, 1 stick 1/3 cup brown sugar packed 1/4 cup granulated sugar 1 large egg cold Coupons 1/2 tablespoon vanilla extract 1/3 cup semi-sweet chocolate chunks 1/3 cup dark chocolate chips
Instructions
Mix together dry ingredients in a large bowl: flour, cornstarch, baking powder, baking soda, and salt. Set aside.
In your stand mixer, cream cold butter until fluffy, about 1-2 minutes.
Add in brown sugar and granulated sugar.
Beat for an additional 2 minutes.
Scrape down the sides of your bowl.
Pour in egg and vanilla and mix until just combined.
Add flour mixture.
Stir in chocolate chips.
Line a 9x13 in the baking sheet with parchment paper or a silicone mat.
Scoop dough into balls, using a cookie scoop, and chill dough for at least 1 hour.
Preheat oven to 375 degrees F.
Bake for 10-12 minutes or until golden brown and cooked.
