Clean Eating Fast and easy Pork Chops in red wine vinaigrette


I will call these “Pork chops In red wine vinaigrette” even I should call them "Easy pork chops" simply because they are so simple and easy to make. A quick dinner for a busy weeknight. And face it, you could all use a few more of those “quick and easy” recipes, don’t you ? I served mine with sweet potatoes because I love the contrast between the red vinegar sauce and the sweet potatoes, but you could just as easily serve any other veggies you want. The cut: Extra thin. These are very thin and cook faster plus is better as a portion, of course, the fat off and boneless. Try these for a weeknight fast recipe or pair it with a nice bottle of wine on a special night !

Ingredients: 6 thin cut pork chops (about a 1/2 inch thick) 2 teaspoons olive oil 6 cloves garlic chopped fine 1 big onion sliced 1/4 of a red pepper diced 1 tablespoon of tomato purees (not tomato paste) 1/2 cup of a well-aged organic Red wine vinaigrette one fist full of spinach (optional ) Salt and pepper to taste Directions: Seasoned the pork chops with salt and pepper to taste. Heat the oil and add the garlic first, then the pork chops. Brown the pork chops on both sides, then add the red wine vinegar, the onions with the red pepper, the spinach and the tablespoon of tomato puree. Continue to cook until the pork chops are done. Serve with a veggie and grain of your choice. Pairs well with a nice bottle of Rose or a good sparkling Rose.
