Autumn island oatmeal

Oatmeal is one of my favorite breakfasts. You can have endless combinations and the textures and colors can vary season to season. Nothing like a hot plate of oatmeal porridge on a chilly Autumn morning. And since we are in Autumn i though was a good idea to have a warm bowl today, it feels like a hug in the morning to jump start the day and the colors of the chocolate,the honey and the toasted almonds,matches the colors of the outside falling dry leaves. But the coconut yogurt reminds me of holidays in the caribean islands, I use sugar free coconut yogurt because is my favorite flavor, but feel free to use just plain one if you prefer.

NGREDIENTS (2 BOWLS) 2 cup almond milk 1 cup oatmeal a handful of toasted almonds 2 pure ounces unsweetened chocolate 4 tablespoon of sugar free coconut yougurt 1 teaspoon real sugar 2 tablespoon honey Crush the almonds and the chocolate a little bit and set aside. In a saucepan bring to a boil the milk and 1 teaspoon of real sugar and when hot add the oatmeal. (I barely use sugar or no sugar at all, feel free to adjust to your taste or diet ) Stir for 5 minutes over low heat and remove. (or follow the instructions on the box, adjust as directed for more servings )Serve in a couple of bowls, Top with one teaspoon of honey for each bowl, 2 tablespoons of yourt each, and sprinkle with the toasted almonds and chocolate!! Enjoy!!
