I use to make the heavy sugar syrup, butter-heavy dough recipe ones and love them, so I decided to work out as many calories as I could using phyllo dough and make it more organic and fruity (adding the organic homemade jam) and giving them a holiday kick by adding the cinnamon and nutmeg! I hope you like my lighter cleaner version of this beauties!

INGREDIENTS

( for 6 roses)

  • 1 sheet of Phyllo dough (I bought mine you can home made yours)

  • 2 delicious red apples

  • 1 lemon (juice it)

  • 1 cup of water

  • Cinamon and nutmeg for sprinkle

  • 1 sprinkle of salt

  • Use any organic jam of your taste ( I use homemade Strawberry-Cranberry jam, recipe will be post soon)

  • 1 teaspoon coconut oil

  • 1 sprinkle of glassé sugar for decoration, (normally I dont like to use this type of sugar, I would use brown or cane sugar but I was out of it, you can use either as you like)

  • A sprinkle of confection flour to work the phyllo

First wash very well the apples, cut them in halves and take the middle where the seeds are. Cut the apples in very thin slices and add them to a bowl with the juice of the lemon and the cup of water, the slices should be cover with the liquid. Microwave in the bowl for 3-4 minutes at medium- high temp. (they still be firm but softer) And save.

Pre heat the oven at 150 degrees and start making the roses on each slice of phyllo dough spread the jam along the lengh, then start by putting slices on a line and then rolling each one forming the rose and putting them inside a muffin tin pre oil with the coconut oil and a sprinkle of cinammon + nutmeg and a litle bit of confection sugar(or the sugar you had use ). Bake for 30 -40 minutes (depend of the oven) take them of the tin when ready and let them cool. Once cool sprinkle with cinnamon, confection sugar and serve!

remember to use fresh and organic if you can.

Enjoy!
