Zuchini-zoodles with a white wine light clam sauce, low carb, low fat, gluten free heaven!


If you are in a low or no carb diet, or simply like me in a pescetarian diet you are familiar with the zucchini noodles. I do eat pasta, but not every day and sometimes I do substitute for this delicious squash. You can cut them with a knife yourself or use like I did this little apparatus I bought in CVS, in one side it make me spaghetti and the other linguini. It is really cool. And this sauce , is light, simple and omg! I love this delicious sauce! Serve it with some baby spinach and grape tomatoes, ad some garlic toasts if you want and enjoy this delicious meal!

INGREDIENTS

1 serving (multiply the recipe for more servings)

2 zucchinis, peeled 1 tablespoon olive oil Pompeian Olive Oil Extra Virgin clam sauce salt and ground black pepper to taste

Cut lengthwise slices from zucchini using a vegetable peeler, stopping when the seeds are reached. Turn zucchini over and continue 'peeling' until all the zucchini is in long strips; discard seeds. Slice the zucchini into thinner strips resembling spaghetti. Heat olive oil in a skillet over medium heat; cook and stir zucchini in the hot oil for 1 minute. Add the clam sauce and cook until zucchini is softened 5 minutes. Season with salt and pepper.

Clam sauce

Ingredients

2 cans chopped organic clams drained reserving 1/2 cup 1 clove garlic, minced 1/8-1/4 teaspoon dried red pepper flakes 1/2 medium onion, diced 2 tablespoons extra virgin olive oil 1 teaspoon dried oregano 1 teaspoon dried basil 2 teaspoons dried parsley (fresh is even better)

1/2 cup white wine

freshly natural grated parmesan cheese

Directions

In sauté pan heat olive oil over medium heat. Add onion, garlic, and red pepper flakes. (Use as much or as little pepper flakes as you like, this can get HOT. I like mine to burn just a little!!) Cook just until onions starts becoming transparent. Toward the end of the cooking time, throw in the oregano and basil. When onion mixture is done, add the chopped clams, the reserved liquid, and the wine. Simmer about 5 minutes over medium heat. Add parsley and simmer one minute more. Douse generously with freshly grated parmesan cheese.

serve with your noodles or zuudles and some garlic toast if you want !
