"Tortilla espanola" clean eats style!


We can call it a frittata, but it’s really one of the most popular dishes in Spain: Tortilla Espanola. Traditionally this dish is fried in a pan with lots of olive oil, and tradition is very important to the Spanish. But because the hardest part of this dish is mastering the art of flipping it in a frying pan , I figured out that we can do it like a frittata ...baked. Trying to eat healthier and delicious in a busy life not always can go hand in hand. So since I’m a big fan of innovation, I baked it instead. You can be as equally as untraditional and use sweet potatoes instead of white or red potatoes! It will be just as yummy and healthier. In the traditional recipe, a lot of olive oil is used, and pork is added (Jamon) If you are not a vegetarian in the clean eating lifestyle you can make this recipe with less olive oil and adding very lean ham or turkey bacon to the recipe. But because I am transitioning to a more vegetarian, clean eat lifestyle myself, I will make it without meat,with spinach and peppers and only a small amount of olive oil and cheese in my tortilla. The final result incorporates the classic eggs and potatoes mix with the spinach and peppers in a travel-friendly package. It’s the perfect solution for a protein-rich breakfast on the go or lunch. Or just to keep it ready cut in the fridge for a snack or small meals anytime. You can cut it into squares, freeze and defrost it, and always have some prepared!

Ingredients

  • **organic pieces of turkey bacon or lean ham diced (cooked,if you are using meat)

  • I/4 of each green pepper and red pepper diced

  • 1 cup baby spinach

  • 1/2 onion diced

  • 1 garlic clove smashed

  • 3 tablespoon almond milk,unflavored and unsweetened

  • Optional: 1/4 cup of Parmesan or Manchego cheese

  • Spices: ½ teaspoon each of cumin and paprika

  • 8 small creamer potatoes, chopped into quarters or sliced and COOKED

  • 6 eggs scrambled

  • 2 tablespoon olive oil

  • salt and pepper to taste

Instructions

  1. Bake or boil the potatoes, then cut them into small chunks or sliced and cook ever slightly.

  2. Preheat oven to 350 degrees.

  3. In a hot fry pan saute the onions,peppers in 2 tablespoon of olive oil until soft, add the potatoes and the spinach and the garlic cook until spinach is wilted and save aside.

  4. Add eggs, spices and milk to a bowl and mix gently.

  5. Add in the cooked meat and cheese. Or add the chopped bell peppers and spinach mixed with the cheese only if what you want is only veggies in your tortilla like I did. Or you can go nuts and mixed it all if you just want a clean eating healthy dish that include some little meat.

  6. Line a pie baking dish with parchment paper and pour in the mixture.

  7. Bake at 350 for 35 minutes.

  8. Let cool on the counter for 10 minutes, slice and serve this all in one breakfast. !
