Spanish tapas recipe in the clean eating style "Gajos de papas" with yogurt and honey sauc


I have a love affair with potatoes, all kinds of potatoes! This recipe I will give you today is call in Spanish " Gajos de papas" is a tapa, no other than potato wedges, but I have gone to the healthier-lighter route, which you can make a little healthier using sweet potatoes instead. But white potatoes is all I had when I did this one and as a pescetarian, I do not hold any prejudice towards a good veggie done right! Instead of flour like is normally used in this tapas, I just add the seasoning, getting it to stick with a little olive oil and instead of frying this, we will bake them. We will be getting so much fewer calories and fewer fats when we do them this way and the result is a slightly toasty outside with a creamy inside, they smell so good and with a nice yogurt sauce it is perfect for a summer lunch or snack, you can eat them as is or add a small salad with some veggie protein. Or a protein like fish or lean meat. Enjoy it!

Potatoes Ingredients

  • 3 organic potatoes (any kind, small/medium size, this recipe is enough for 2 people if is eat as a side dish, for one if is a dinner or lunch on its own)

  • 2 round spoons Extra virgin olive oil

  • 1/2 cup white wine

  • 3 medium garlic cloves mashed

  • salt and pepper to taste

  • seasonings to your taste (you can use oregano , paprika ect)

  • 1/4 cup slice red peppers (I used ombre kind, this is strictly optional)

Wash well the potatoes and cut them into wedges, in a bowl mix the olive oil, white wine 3 garlic cloves (mashed) salt and pepper. Now add the potatoes and coat them well with the mix. Pre-heat the oven at 275º, and get the wedges on an oven tray, you can use aluminum paper with spam to cover the tray or better yet, cover the tray with vegetable paper so they don't get stuck. Now Bake for 40 minutes approx, until they are soft inside and crispy and golden outside. Serve them with some of my yogurt dips. It is so delish! ps: I add slices of red ombre peppers to be bake with the potatoes, they come out like crisps to mix with the potato and giving them another dimension of flavors and texture between each bite. You can add your favorite seasoning or toppings. I add wilted spinach at the end before serving them just to give them another layer of color and nutrition.

For the dip

  • 1 medium Greek organic yogurt, without sugar plain

  • 1 round spoon of organic real honey

  • 1 garlic clove

  • salt and pepper to taste

  • fresh parsley

Get the mix in a big enough cup and mix vigorously until is well mix and that it is! Get your wedges on a plate with a side of the dip and top it off with some dry spices like paprika and oregano to finish it, if you want! Now enjoy it! (perfect for a summer day, really)
